Baked Chicken Thighs with Roasted Broccoli
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 lb broccoli florets
- 2 tablespoons olive oil
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the paprika, garlic powder, onion powder, dried thyme, salt, and pepper.
- Place the chicken thighs on a baking sheet lined with parchment paper.
- Rub the spice mixture evenly over both sides of the chicken thighs.
- In a separate bowl, toss the broccoli florets with olive oil, salt, and pepper.
- Arrange the seasoned chicken thighs and broccoli on the same baking sheet, making sure they're not overcrowded.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the broccoli is tender and slightly charred.
- Remove from the oven and let it rest for a few minutes before serving.
