Broccoli Cheddar Soup
Ingredients
- 2 cups fresh broccoli florets
- 1 tablespoon olive oil
- 1/4 cup diced onion
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 1-1/2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic to the pot, and sauté until the onion
- Add the broccoli florets to the pot and cook for 2-3 minutes, stirring occasionally.
- Pour in the chicken or vegetable broth and bring to a simmer. Cook for 10-15 minutes, or until the broccoli is tender.
- Using an immersion blender or regular blender, puree the soup until smooth and creamy.
- Return the soup to the pot and stir in the heavy cream and shredded cheddar cheese.
- Continue to cook over low heat, stirring occasionally, until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and serve hot.
