Cauliflower Fried Rice
Ingredients
- 1 small head of cauliflower, grated or processed into rice-like texture
- 2 tablespoons avocado oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1/2 cup carrots, diced
- 1/2 cup peas
- 2 green onions, chopped
- 2 tablespoons tamari or soy sauce
- 2 large eggs, beaten
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of avocado oil in a large skillet over medium heat.
- Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until fragrant and slightly softened.
- Add the diced carrots and peas to the skillet. Cook for another 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and add the remaining tablespoon of avocado oil to the empty side.
- Pour the beaten eggs into the empty side of the skillet and scramble them until cooked through.
- Combine the scrambled eggs with the cooked vegetables.
- Add the grated cauliflower rice to the skillet and stir to combine all the ingredients.
- Pour the tamari or soy sauce over the cauliflower rice and mix well.
- Season with salt and pepper to taste.
- Cook for an additional 3-4 minutes, stirring occasionally, until the cauliflower rice is heated through.
- Remove from heat and garnish with chopped green onions.
- Serve hot and enjoy!
