Coconut Flour Pancakes with Sugar-Free Maple Syrup
Ingredients
- 4 large eggs
- 1/4 cup coconut flour
- 1/4 cup unsweetened almond milk
- 2 tablespoons melted coconut oil
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Stevia or low-carb sweetener to taste
- Sugar-free maple syrup for topping
Instructions
- In a bowl, whisk together the eggs, coconut flour, almond milk, melted coconut oil, baking powder, vanilla extract, and sweetener until well combined.
- Let the batter sit for a few minutes to allow the coconut flour to absorb the liquid.
- Heat a non-stick skillet or griddle over medium heat. Grease with a little coconut oil if needed.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes.
