Greek Salad with Grilled Chicken
Ingredients
- 2 boneless, skinless chicken breasts
- 4 cups mixed salad greens
- 1/2 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives
- 1/4 red onion, thinly sliced
- 2 ounces feta cheese, crumbled
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh oregano leaves for garnish
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for 6-8 minutes per side, or until cooked through. Let it rest for a few minutes, then slice it into strips.
- In a large salad bowl, combine the mixed greens, cucumber, cherry tomatoes, Kalamata olives, and red onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
- Add the sliced grilled chicken and crumbled feta cheese to the salad bowl.
- Drizzle the dressing over the salad and toss everything together until well coated.
- Garnish with fresh oregano leaves.
- Serve immediately and enjoy!
