Spinach and Cheese Omelette
Ingredients
- 3 large eggs
- 1 cup fresh spinach leaves
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced red bell pepper
- Salt and pepper to taste
- Butter or olive oil for cooking
Instructions
- In a bowl, beat the eggs until well combined.
- Heat butter or olive oil in a non-stick skillet over medium heat.
- Add the diced red bell pepper to the skillet and sauté for a few minutes until slightly softened.
- Add the fresh spinach leaves to the skillet and cook until wilted.
- Pour the beaten eggs over the spinach and bell pepper mixture.
- Cook the omelette, gently lifting the edges with a spatula to allow the uncooked eggs to flow underneath.
- Sprinkle the shredded cheddar cheese evenly over one half of the omelette.
- Fold the other half of the omelette over the cheese to form a half-moon shape.
- Continue cooking for a minute or until the cheese is melted and the eggs are set to your desired consistency.
- Season with salt and pepper to taste.
- Slide the omelette onto a plate and serve hot.
